I made these tonight with homemade chicken noodle soup. These are one of my favorite dinner rolls. I love getting in some veggies with my bread. :-)
Butternut Squash Dinner Rolls
1 1/2 c. flour, divided
1 c. whole wheat flour
4 1/2 tsp fast-rising yeast
1-2 tsp. salt
1/2 c. milk
1/4 c. honey
1-2 Tbsp butter
3/4 c. mashed squash
1 egg
Combine first four ingredients in a large bowl. Heat milk, honey and butter in small pot until very hot. Add milk mixture to flour, mixing until smooth. Mix in squash and egg and enough extra flour to make a smooth dough. Knead dough until smooth and elastic, place in greased bowl and let stand (covered) in a warm place until dough doubles in size (about 30-45 minutes). Punch down dough, shape into round balls and bake in a greased muffin tin at 375 F until browned; about 20-25 minutes.
This is such a good idea - cuz Kalea will not eat veggies. I'm always looking for ideas to hide 'em for her. ;-)
ReplyDeleteThere is an amazing cookbook called "Stealth Health" and the whole point of it is to sneak veggies. My favorites ae brownies with black beans in them for fiber.

ReplyDeleteI made these, and they were really dense--are they supposed to be more like a white roll or more like a cornbread consistency?
ReplyDeleteQueen...try freeze dried veggies. My kids don't care for veggies either but they love freeze dried veggies and fruit.

ReplyDeleteI first bought some small 8oz pkgs of different fruit/veggies from http://www.mountainhouse.com/ -Then when I found they liked all this stuff, even broccoli, I ordered the freeze dried fruits/veggies from www.beprepared.com which is where I buy my food storage items from. I think the kids like the crunch of the freeze dried foods. When I have added water to the same freeze dried foods, the kids won't eat them. I guess they don't like the mushy texture of many fruits & veggies. Good luck!

ReplyDeleteGotcha... do they still have all the good stuff veggies have when they're freeze-dried? And... should I first get 'em from mountain house to find out if she likes them before the big honkin' size? AND... my New Years Resolution... food storage. ;-) Thanks for the reminder. Todd knows how lucky he is right?! ;-)
ReplyDeleteI believe they have the same nutrients as regular veggies. They pretty much look and taste the same...except they are crunchy. I bought the small "backpacker sizes" from Mtn House to make sure the kids liked the food. I haven't found anything on the web that indicates this stuff isn't good for you. You might need to remind Todd of his good fortune! You know how hubbies are.
ReplyDeleteIf you don't want to pay for shipping to see if she likes them, Gerber sells them as "toddler fruit" in the grocery store. You can also get them from the church cannery. Apples are a big plus. Check out emergency essentials website, too.
